Dark Chocolate Raspberry Truffles!

It's National Raspberry Tart Day, so staying in the 'theme' of raspberries, I though I would share a favorite truffle recipe of mine. I do temper all the chocolate for my recipes, even though the links don't specify that you have to. I am just a perfectionist, like my candy shiny and all pretty looking!
