Usually when I "over shop" I make my husband his favorite truffles with thin mint cookies. I found myself in a predicament earlier this week (there was a good sale on kids’ clothes at Baby Gap!). Then I discovered that there were no thin mint cookies to be found in my house. I did, however, have some store-brand lemon sandwich cookies. I thought about it for a minute and decided that it was worth a shot . . . which ended up being the best decision I made all day!

Three ingredients, no baking required, and a husband who has forgiven me once again for my shopping addiction . . . this is the best dessert ever.
