Happy National English Toffee Day! A toffee cookie with coconut, toffee bits and dipped in chocolate with a sprinkling of more coconut and toffee bits. The added time for these cookies is spent chilling the dough. This is not necessary to yield a great tasting cookie. This step helps keep the cookie shape while baking but can be omitted.
