Coconut flakes, maple syrup, pastured butter, eggs. Sounds like cookie dough to me, but with coconut flakes instead of flour.
Good. I thought. It will be gluten free! Which meant more people at the party could probably eat it, because, duh, of course we would share. ;)
I ended up making these super tasty coconut cookie dough balls, freezing them for an hour, and then triple coating them in dipping chocolate. They were heavenly! I know I’ll be making them again soon. :)
