Today is National Truffles Day and Baby Day, and when you put these together you get Baby Shower Truffles! These gorgeous pink and blue coconut chocolate truffles are perfect addition to any baby shower (although they can easily be decorated in other colors for any event!).
7 oz Dark Chocolate
7 oz Milk Chocolate
1/3 cup Thickened Cream
¾ teaspoon Coconut Essence
¼ – 1 teaspoon Milk
Blue and Pink Sprinkles
Break up the chocolate and place in a heat proof bowl. On half power in the microwave, melt the chocolate one minute at a time, stirring in between heats. This may take up to 5 minutes on half power. (Do not use full power or you will likely burn the chocolate – and no one wants to waste chocolate!).
Once the chocolate is completely melted, stir in cream and essence until combined. (Note: chocolate should remain runny. If chocolate becomes sticky, cake-like or a fluffy consistency add ¼ teaspoon of milk at a time until returns to a runny consistency. More than 1 teaspoon should not be needed).
Let the chocolate set in the fridge for 4 hours. (For best results, leave uncovered in the fridge for 4 hours and then cover the chocolate and leave in the fridge over-night). Lay out the truffle pans and put sprinkles into separate bowls.
With 1 ½ teaspoons of truffle mixture, roll the truffle in the palm of your hand. Place alternative truffles in pink and blue sprinkles and roll in sprinkles until completely covered. Place truffle in truffle pan.
Note: The best way to roll perfect truffles is with cool dry hands. Run your hands under cold water and dry completely. Do this after every 4 – 5 truffles, or when you find the chocolate sticking to your palms.
Truffles can be stored in an air-tight container for about a week.
