The Chocovision Holey Baffle for the Rev 3Z increases the machine capacity from 30 lbs. to roughly 45 lbs. with no compromise to the tempering process. In addition to the capacity increase, the Holey Baffle provides performance improvements due to more direct heat reaching the pool of chocolate at all times.
